After months of coveting photos of other nutrition enthusiasts’ kale chips, envying their brilliance through simplicity, I finally made kale chips of my own. My twist on kale chips recipe taste cheesy, but are dairy free, and guilt free.

Simple UnCheesy Kale Chips

Once baked, you can try to let them cool before you eat them all - but good luck! As a total potato chip lover, these kale chips are excellent replacements. They can be seasoned however you like!


  • 1 Bunch of Kale
  • 1-2 Tablespoons Ume or other Vinegar (to taste)
  • 1/8 Cup Nutritional Yeast
  • 1/8 Cup Almond Meal


  1. Preheat oven to 425F
  2. Trim and throw out rib of each kale leaf (center, thick part).
  3. Toss all ingredients.
  4. Taste and adjust seasoning.
  5. Place rack on cookie sheet, and lay out coated kale leaves in even layer.
  6. Bake until 90% dried out.
