This is a simple tomatillo salsa recipe that is so versatile. We mix it with pulled meat, dab on tacos, and spread onto our egg scrambles. It is so delicious!!

Roasted Tomatillo Salsa Recipe

This is an adaptation of Rick Bayless's Raw Tomatillo Salsa (RickBayless.com).

Ingredients

  • 5 Tomatillos, husked, rinsed, and quartered.
  • 2 Large garlic cloves, peeled and quartered.
  • 1 Jalapeno or hatch chili pepper, stemmed and roughly chopped
  • 1 Small or 1/2 large bunch of cilantro, roughly chopped
  • Salt

Instructions

  1. Turn on broiler.
  2. Put tomatillos on a cookie sheet covered with aluminum foil and roast under broiler on highest rack, turning as each side gets a little blackened, until all sides are darkened. They won't be perfect, but get at least 4 to 5 good dark spots.
  3. Let tomatillos cool.
  4. Blend all ingredients. Taste and adjust as needed.
