Our family loves it when our Bountiful Basket of veggies come, and I am SUPER thrilled when it comes with a Mexican Ingredients box. This week it did, and I whipped up this simple pico de gallo recipe in no time!

Pico de Gallo Recipe – Super Easy!


  • 6 firm roma tomatoes
  • 1 medium onion
  • 1/2 bunch cilantro
  • 1/2 jalapeno
  • 3 tiny limes or 1 regular lime
  • salt to taste (1-3 pinches)


  1. Dice tomatoes, onion and jalapenos, and place into small to medium bowl.
  2. Chop cilantro and squeeze lime(s) into mixture.
  3. Add pinch of salt.
  4. Stir and taste. Add salt and/or lime as needed.
  5. ENJOY!


* If you don't like it spicy, remove seeds from jalapeno.

Pico de gallo is like all the chunks of the salsa without the sauce. My family is crazy for it, and insist we use this pico de gallo recipe whenever tacos are “what’s for dinner” — which is fairly often. It is very healthy, and a great fast food at home.
