This greens and egg recipe is one of my favorite meals, and the Youngren family eats it at least 4-5 times per week. It is quick, easy, delicious, and very simple. However you like your eggs, they will taste wonderful over these greens.

Gluten Free Swedish Pancake Recipe, for Example
This recipe was created for a family who has, for years, eaten a beloved breakfast many weekends, made with love and generosity by a wonderful dad and husband. The Youngren kids are now teenagers who sometimes don’t want to hear about mom and dad’s desire to eat more healthy.
(photo by Fotohogg) Updated! This recipe is one I am more excited about that just about any other. My husband has made “skinny hots” – or Swedish Pancakes – for our family for years. It has been very sad lately (since he was sick) to see him eat them and pay for it later, or, even worse – not eat them at all after he makes them for everyone else. I could not be more thrilled to have a dairy free, gluten free, and sugar free (except a little honey and Stevia) version. Yayy!!!
This is a salad my husband and I fight over. He packs a lunch for work each day, filled with gluten-free, protein-packed food from our fridge. Community property rules of the fridge don’t apply to this salad – every man for himself!
After years of trying unsuccessfully to make fried chicken, I finally found my dream fried chicken! Crisco and flour must have led me astray. Or maybe our move to Texas just seeped into me, causing me to make great fried chicken. Whatever the reason, this gluten free fried chicken is an absolute hit at our house, and my wonderful husband can even eat it!
This is our signature “Get Well Soup” recipe, but we can’t stop calling it “Sick Soup”. Ginger and garlic and cayenne – oh my! You WILL feel better soon. At the first sign of any cold or flu, mama’s in the kitchen making sick soup. Having given this recipe out to dozens of people personally, we’ve gotten nothing but outstanding feedback about the results.
