Vegan and Gluten Free Pizza Sticks


These gluten free pizza sticks were inspired by various gorgeous photos of cheesy cauliflower pizza crusts, but I was determined to formulate a dairy free pizza option without using the yummy but hard to find Daiya vegan cheese.

This is probably one of the most quickly devoured snacks in our house. It may take up to 15 minutes for them to be gobbled up. Pizza? Maybe not in the literal sense of the word, but when you dip them in marinara sauce, they sure taste like cheesy pizza!

Vegan and Gluten Free Pizza Sticks

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes

Yield: Approximately 8 sticks.

Vegan and Gluten Free Pizza Sticks


  • 2 Cups Riced Cauliflower (Directions on Ricing Flour Below)
  • 1/4 Cup Brown Rice Flour
  • 1/8 Cup Arrowroot or Tapioca Flour
  • 1 tsp. Garlic Powder
  • 1 tsp. Dried Oregano
  • 1 tsp. Kosher or Sea Salt

  1. Preheat oven to 425°.
  2. Mix all ingredients.
  3. Form mixture into "sticks" that are about 3" wide and 4-5" long (and as thin as possible without leaving holes) onto parchment lined baking sheet.
  4. Bake until golden brown (approximately 20-25 minutes).
  5. Carefully remove gluten free pizza sticks and cool on rack.
  6. Serve with warm marinara (pizza) sauce.
  7. Optional: top with pizza sauce and your favorite pizza toppings.
  8. How to rice cauliflower:
  9. Clean cauliflower head and chop into big chunks.
  10. Place chunks into blender until it is 1/2 to 3/4 full.
  11. Add water until it just barely covers cauliflower.
  12. Blend in short pulses JUST until cauliflower pieces are the size of rice. If you blend it too much, it will be pulverized and you won't get the result you want.
  13. Drain water from cauliflower and store refrigerator in air tight container until you are ready to use it.


Don’t be fooled by the fact this is gluten free and dairy free. The toasted flavor of the baked caulfilower is complemented by the cheesey gooy-ness created by the combination of the Vegan Cheesey Cashew Dip and tapioca/arrowroot flower creates a toasty, gooey, albeit gluten free pizza we all crave.
