Fav Roasted Vegetable Recipe

Optional: when tossing all ingredients after baking, you can add any type of toasted nuts, flax meal, and/or chia seeds for a nutritionally balanced dish. The nuts add a fantastic crunch and toasty flavor!

Ingredients

  • 2 Bunches Broccoli
  • 2 Red Bell Peppers
  • 1 Medium Red Onion
  • 4 Cloves Garlic
  • 5-10 Thai Chillies (or 1-2 Jalapenos)
  • 2-4 Tablespoons Olive Oil
  • Salt to taste
  • Pepper to taste
  • Zest of one medium (or 1-1/2 small) lemon(s)
  • Juice of 1/2 medium (or one small) lemon

Instructions

  1. Cut vegetables into bite size pieces, thinly slicing onions
  2. Preheat oven to 4250 F
  3. Coarsely chop garlic (in halves or quarters)
  4. Cut stems off Thai chilis, and cut in half (or coarsely chop jalapeno - remove seeds if you do not like a lot of spicy heat)
  5. Toss vegetables, onions and garlic with olive oil - they should be lightly coated, and spread evenly onto aluminum-covered sheet pan.
  6. Sprinkle with salt, pepper, and lemon zest. Taste and adjust seasoning.
  7. Bake, uncovered, at 425 until brown - about 15-25 minutes.
  8. Drizzle with lemon juice. If you use a Meyer lemon, use whole lemon - but taste as you go.
  9. Toss in bowl, taste, adjust seasoning.

You can replace the vegetables in this recipe with almost (if not) any! Just use what is in your fridge, be sure to add olive oil, salt, pepper, garlic and onions. Once you are comfortable roasting vegetables on a regular basis, produce never has to spoil in the fridge again!

This dish is perfect for cooking ahead and reheating. It is a family favorite for packing in lunches to go.
