Dairy Free Ice Cream – Strawberry

Dairy Free Ice Cream - Strawberry

Ice cream is a hit in our house. Cutting dairy a couple years ago (and avoiding soy) has meant spending more at the store for ice cream made with coconut milk. Last night I got brave and used ugly, aging strawberries and a simple mixture withe few ingredients to make what turned out to be a delightful batch of dairy free ice cream. It was so simple (and I still had ugly strawberries left) that I made another batch right after the first.

  1. Blend strawberries and orange liquor into smooth puree.
  2. Cook strawberry puree over medium-high heat; bring to boil. Reduce heat to low and simmer, stirring often, until puree is reduced by about half. Let cool.
  3. Blend coconut milk with puree mixture in blender.
  4. Process in ice cream maker and freeze.
  5. Enjoy!

You can use any coconut milk in a pinch in this, but if you use high quality, natural coconut milk that has only ONE ingredient: coconut, the coconut flavor is much more light and won't dominate the dairy free ice cream.

* Orange liquor can be replaced with orange juice. ** Tapioca flour improves texture a bit, but is optional.
