Chocolate Haystack No-Bakes

This recipe for gluten free, dairy free, and cane sugar free, chocolate haystack no-bakes recipe has become a guilt-free Christmas tradition, and a pot luck favorite.

It can be intimidating coming up with something to bring to a holiday party or cookie exchange when you’re one of  “those” people who eat healthy. So, if you eat pretty “normal,” but are looking for great recipes that are healthy — but no one will notice — then you’ll love this recipe. You’ll especially love it if you are a fan of chocolate haystack cookies!

Super Easy Chocolate Haystack No-Bakes

Total Time: 30 minutes

Yield: About 24 Cookies

Super Easy Chocolate Haystack No-Bakes


  • 1/2 cup almond butter
  • 1/4 cup soft or melted coconut oil
  • 1-1/2 cup coconut palm sugar
  • 2 Tablespoons honey
  • 1/2 cup unsweetened cocoa powder
  • 1 Tablespoon vanilla
  • 1/4 teaspoon kosher or sea salt
  • 1/4 cup water
  • 2 cups oatmeal
  • 1 cup shredded coconut


  1. Combine all ingredients with mixer except oatmeal and coconut.
  2. Add remaining ingredients and mix on low to medium setting.
  3. Form 1-inch balls and place on serving plate.
  4. Refrigerate (if you can). Cookies need less time to chill if the coconut oil is not melted when added. For best results, chill for at least 30 minutes (but good luck -- these are so good that they rarely are allowed to chill at our house).


Hardened coconut oil may not incorporate as well into cookies.
