Breakfast Potato Recipe


This is a quick and easy breakfast potato recipe. Dicing those spuds will take the most time, and you can add almost anything to it. We love our potatoes with bell peppers, jalapenos and lots of onions. This is the easy version; the flavors are elevated a bit when the onions are caramelized and set aside while the potatoes are browned.

  • 6 Medium Potatoes (or 4 large or 8 small)
  • 1 Medium Onion
  • 1 Jalapeno
  • 1 Bell Pepper Optional -- red, yellow, or orange look pretty
  • 2 tsp. Kosher or Sea Salt to taste
  • 2 tsp. Black Pepper to taste
  • 1 tsp. Coriander to taste
  • Olive Oil approximately 4 TB


  1. Dice potatoes into very small cubes (about 1/4-1/2 inches).
  2. Cut onion into quarters and slice each quarter very thinly (or chop).
  3. Very finely chop jalepeno and bell pepper.
  4. Generally cover bottom of skillet with olive oil and bring to high heat.
  5. Toss potatoes, jalapeno, bell pepper, and spices into pan, stirring and flipping a couple of times to combine.
  6. Let the bottom get dark, then scrape potatoes off the bottom and gently toss in pan.
  7. Taste and season if necessary.
  8. Repeat until cooked through.
  9. Enjoy by itself, on a taco, or with your favorite breakfast.
